Flipping delicious!

250g plain flour, a pinch of salt, 500ml milk and then a splosh more, 2 eggs fresh from the farm. Whisk it all up!
Slice up some lemons
Put out a bowl of golden caster sugar.
Oil a very hot pan, just a very little oil, not too much!
Fry until golden, flip and fry again!
Sprinkle liberally with sugar
A good squeezing of lemon..
Roll it up!
Add lots and lots more sugar when you think no-one is looking!
and gobble it up quick!
A few more from the left-overs will be re-heated later in the bottom oven! More heaven on a plate for tea!

Pancakes are delayed here until after tea when daddy gets home! he would be gutted to miss out on the fun...and he is the king flipper around here... but school went back today after half term and tired kids, tired me and a mountain of laundry meant i could think of other reasons to use a frying pan!

I'm looking forward to ours this evening. Amusingly I have just got in from a quick lemon dash! The supermarket did make me laugh - there was a note up saying that there is a nationwide shortage of free range eggs...tee hee. Bring on the pancakes! C x

Thanks a lot, T. I stuck the laptop on the kitchen island tonight and used your recipe and instructions. Turned out pretty well (except the first one but that's always rubbish - at least that's my excuse and I'm sticking to it).

How great are pancakes?!?!?! I can never understand why we forget about them in our house and have them only once a year. thanks for visiting my blog, I just spent an enjoyable half an hour looking through yours. We don't generally use sugar so only have the muscavado type indoors and it is just d-i-v-i-n-e with lemon on pancakes - it goes all treacly and scrummy - might have to have pancakes bit more oftener.
Just for the kids, word veryfication is RUGRAT!
